Botanical description
The plant grows to a height of 20 to 70 cm, with a cylindrical, hairless, and upright stem. The roots are fusiform. The leaves, which can reach up to 7 cm in height, are basal with long petioles, entire, or can be three-lobed or three-parted, with simple pinnate sections.
They feature rounded, wedge-shaped incisions and crenate-cut edges. The lower stem leaves have short petioles, are once or twice pinnate with few primary segments, broadly ovate with wedge-shaped bases, pinnately incised, with crenate-cut terminal segments.
The broad leaves have obtuse serrations and pointed tips, while the middle and upper leaves are rectangular with membranous-white edges. They are two or three times pinnate with linear or thread-like incisions, sparsely complete.
The central umbel is higher than the lateral ones, having 3 to 5 unequal rays. The bracts are often in threes, very narrow, thread-like, and needle-shaped.
The plant’s fruit is yellow with a diameter of 3 mm, turning brown as it matures, with each fruit containing 2 to 3 Seeds.
The Latin name for coriander (Coriandrum sativum) is derived from the Greek word “Korio,” meaning unpleasant-smelling. Various sources indicate that the fresh fruit of this plant has an unpleasant odor, which dissipates as the plant dries, becoming aromatic. However, this is not true; fresh coriander fruit is very fragrant.

Ecology of Coriander Cultivation
– This plant requires a significant amount of sunlight. Its growth period is four months, during which it needs 1400 to 1500 hours of sunlight.
– The ideal temperature for this plant’s growth is between 18 to 20 °C.
– After germination, the Seeds can withstand temperatures of -8 to -10 °C. In the early growth stages (4 to 6 leaves), the plant can tolerate very low temperatures, down to -16 to -18 °C.
– The planting time depends on the climatic and geographical conditions of the cultivation area. Coriander is planted in both spring and autumn. For spring planting, the soil should be prepared in the previous autumn.
This includes plowing the field and adding decomposed animal manure and chemical fertilizers to the soil. The chemical fertilizers to be added in the autumn are:

A furrow maker is used to create deep furrows for water passage. The raised soil on both sides of the furrows is called ridges. Plants like cotton, corn, and sunflower are planted on the ridges, while crops like potatoes and sugarcane are planted in the wide furrows. Irrigation is done manually or with the furrow maker. The water level in the furrow is 2 to 3 cm below the Seeds, and water moves towards the Seeds through pipes, facilitating aeration.

The separation process occurs post-harvest to dry the different parts of the plant separately. This includes grading for preparation before entering the dryer, which can involve cutting or not, depending on whether separation and grading are necessary.
This process is common among large-scale Manufacturers who use conveyors or shelf dryers.
The simplest method for removing unwanted parts is manual sorting on an inspection table. A slow-moving belt is used, and two people remove weeds, stones, and other impurities.
If conveyor dryers with thermal power of 0.6 to 2 mW are used, cutting and separating branches stems, and fruits are common pre-drying operations.
The processing line consists of three main parts:
- Feeding conveyor
- Special cutters
- Airflow separators
The harvested plant materials are placed on the conveyor. The feeding unit includes a belt elevator and an adjustable rotary-toothed scraper.
By selecting the distance between the belt and the scraper, the amount of plant material entering the machine can be controlled. This ensures the slow movement and gentle pressing of the materials for successful cutting.
Usually, special circular cutters are used. After cutting, the chopped materials are transferred to the airflow separator, which includes a ventilation system that generates an airflow.

When harvesting aromatic medicinal plants, about 50% of the material consists of herbaceous stems and branches, which are separated from the medicinal parts of the plant before drying.
One of the advantages of this processing method is that threshing is no longer necessary after drying. The disadvantages, however, include the high cost of separation and the reduction of the essential oil content in the plant parts due to the mechanical treatment of the plant materials.
